Who was trained in what, when, and how you checked they understood.

Why you need it

Food law requires food handlers to be supervised and instructed or trained in food hygiene to suit the work they do. A training record is not itself a legal requirement, but it is the clearest way to show an environmental health officer who has been trained and how you checked they understood.

What it’s for

A record for one employee: role and start date, each safe method, course or task, the trainer or provider, how competence was checked and the outcome, with initials from both sides. It includes space for follow-up, refresher training and a manager review date.

How to use it

  1. Start a sheet for each new employee on their first day.
  2. Show the task, check understanding with questions, then watch them do it before you sign it off.
  3. Record the outcome honestly, and set a follow-up date if more supervision is needed.
  4. Add refresher training, and any training on new recipes, equipment or safe methods, as it happens.
  5. Review each record on the date set by the manager, and keep it with your food safety records.
