What changes when you cross a border

England

The Food Hygiene Rating Scheme, scored 0 to 5 by your council's environmental health officers. Displaying the sticker is voluntary, though the score is public online and customers look.

Wales and Northern Ireland

The same 0 to 5 scheme, but displaying your rating is the law: in Wales since 2013 and in Northern Ireland since 2016. A poor score is on the door, not just on a website.

Scotland

The Food Hygiene Information Scheme instead, with a result of Pass or Improvement Required rather than a number. Scottish law also requires reheated food to reach 82°C.

Everywhere in the UK: a new food business registers with its council at least 28 days before opening, for free, and it cannot be refused. Food handlers must be trained in line with their work. The law names no particular certificate, but food hygiene training is the accepted standard for anyone handling open food and supervisor training for the person supervising them.
