Supervisor

For the person in charge: food safety at supervisor level, HACCP, and managing allergens.

Why you need it

  • You are responsible for the system

Food businesses must run food safety procedures based on HACCP principles, and the people who develop and keep those procedures must be trained in HACCP (Regulation (EC) No 852/2004).

  • Level 3 is for supervisors

Level 3 is the level usually recommended for the person who supervises a kitchen: it covers managing the team, the records and an inspection, not only handling food. The law asks for training that suits the work, not a particular level.

  • Allergens need managing, not just knowing

From labelling food prepacked for direct sale (Natasha's Law, in force since 1 October 2021) to the menu and the kitchen, allergen control is a supervisor's job.
