The 14-day plan

One job a day. You always know what to do next.

The plan is written for an owner who is also cooking, serving and ordering stock. Nothing on it takes a whole day, and every step leaves something an inspector can see.

  1. Days 1–2

Read the report with the decoder. List every problem.

Copy each line of the inspector's letter into the worksheet. Each one becomes a fix, a record and, where it helps, a poster. Book the Level 2 course for the person who prepares the food.

    • Report decoder
    • Level 2 course
  2. Days 3–5

Fix the quick things. Photograph each one, with the date.

The basin, the labels, the fridge layout, the chopping boards, the cloths. Put the posters up where the job happens. A dated photo of each fix goes in the folder.

    • Posters
    • Evidence folder checklist
  3. Days 6–9

Put the written methods in place. Start the daily records. Train the team.

Fill in the written safe methods for your menu, using the filled-in examples. Start the opening and closing checks and the fridge sheet, on paper or in the app. Each person passes the course in their own language.

    • 37 written safe methods
    • 21 record sheets
    • Kitchen app
  4. Days 10–13

Keep the records going every day. Sort the bigger jobs. Fill the folder.

Repairs, the extract clean, new equipment: keep every receipt. Two weeks of signed records, the certificates, the photos and the receipts go into the evidence folder in the order the checklist gives.

    • Evidence folder checklist
    • Record sheets
  5. Day 14

Run the ready checklist. Send the re-rating request.

Walk the kitchen with the final checklist as if you were the inspector. Then send the request letter to your council; the template has the gaps marked for your details and the fixes you have made.

    • Ready checklist
    • Re-rating request letter

After day 14. The visit is usually unannounced, within about three months of a paid request, so the records carry on every day. That is what the free months of the kitchen app are for.

What's in the pack

Everything, laid out on the counter.

Not a course to sit through. Papers to fill in, put up and hand over. Every item is in all 16 languages except the filled-in examples, which are in English like the record sheets they show. The examples use a takeaway, so they look like your kitchen.

How a re-rating visit works

You ask, the council visits, the new rating replaces the old one.

The rules differ a little across the UK. The pack's nation guide has the detail; this is the shape of it.

  1. 1Fix the problems on the report. The council expects the work done before you ask. That is what the 14 days are for.
  2. 2Ask your council for a re-rating visit. Most councils in England charge for it (Salford, for example, £191; one industry survey found 84% charge, averaging about £220). Wales is £255 at every council, Northern Ireland £150, Scotland free at present.
  3. 3The visit is usually unannounced.Within about three months of a paid request. Nobody rings ahead, so the records have to be kept every day, not just the week you send the letter.
  4. 4The new rating replaces the old one.It can go up, stay the same or go down. Only the council decides. If you think the rating is wrong you can appeal, and you can publish a right to reply at any time.

Sixteen languages. Turkish is new, for this pack.

The plan, the decoder, the letters and the posters in the language the owner and the team actually read; the Level 2 course and the kitchen app in 15 of the 16 (every one except Turkish). The certificate stays in English, on purpose: the person reading it is a UK inspector.

Straight talk

Only the council gives the rating, and a re-visit can go up or down. We help you get ready; we can't promise a score.

What the pack does
Turns the inspector's letter into a list of fixes, puts the written methods and records in place, trains the team, and builds the evidence an inspector looks for.
What it doesn't do
It isn't an inspection and we aren't the council. We have no link to the Food Standards Agency or to any local authority. Our paperwork is written to FSA guidance.
What the Check is
One look at your filled-in forms and your evidence folder before you ask for the visit, with written feedback within 2 working days. It tells you what is missing or unclear. It is not a mock inspection and we don't visit.

Before you buy.

The questions owners ask us first.

Will this get my rating up?

We can't promise that, and nobody honest can. The council gives the rating, and a re-rating visit can go up, stay the same or go down. What the pack does is make sure the problems on your report are fixed, written down and provable, which is what the inspector is there to look at.

Your written methods are in your free Food Safety Pack. Why pay £49?

True: the 37 written safe methods and 21 record sheets are free on this site. The Ready Pack adds the 14-day plan, the report decoder, a filled-in example of every sheet, the three letters, the nation guide and the evidence folder checklist, plus a Level 2 course place, the free months of the app and 50% off up to 10 more course places. If you only want the methods, take the free pack.

How fast do I get it?

Straight away. The pack is a set of PDFs in your account the moment you pay, and the course place is ready to give to whoever prepares the food. Pick your language on the download page.

My staff don't read English well. Does that matter?

No. The pack is in 16 languages, including Turkish, Polish, Arabic, Bengali, Urdu and Chinese, and the Level 2 course in 15 of them (every one except Turkish). Each person picks their own. The certificate is issued in English because the person reading it is the inspector.

What does the Check involve?

When your forms are filled in and the folder is ready, you send us photos or scans through your account. Within 2 working days you get written feedback: what is missing, what is unclear, what an inspector is likely to ask about. One check per pack. We don't visit the kitchen.

Do I still have to pay the council?

Usually, yes. In England most councils charge for a re-rating visit (Salford, for example, charges £191). Wales is £255 at every council and Northern Ireland £150. Scotland is free at present. The pack's nation guide tells you how to ask and what to expect. Some councils give one free re-visit between inspections.

How long do I have to appeal?

21 days from receiving the rating in England, Wales and Northern Ireland, 14 days in Scotland. The appeal letter in the pack is for when you think the rating itself is wrong. If you simply disagree with how things were described, the right to reply is published next to your rating and you can send it at any time.

Do I have to display the rating?

In Wales and Northern Ireland, yes, by law, with a £200 fixed penalty if you don't. In England it's voluntary. In Scotland the scheme is different and the sticker isn't required.

Is the app the same as the kitchen app on this site?

Yes. Pack buyers get 3 months free on the £9 a month plan, or 1 month free on any plan, whichever suits. Fridge checks, cleaning, opening and closing checks and the written methods on a phone, with a read-only portal you can open for the inspector.

How long does the certificate last?

Each certificate carries a recommended refresher date, three years on for Level 2, and anyone can check it online by its number.
