Sheffield’s list runs to 4,874 businesses: 1,446 restaurants, cafés and canteens, 885 shops selling food, 611 takeaways and sandwich shops and 530 in other catering. What stands out is the institutional side, with 337 hospitals, nurseries and care homes and 261 schools, colleges and universities, plus 169 supermarkets. That is a substantial block of larger, settled kitchens sitting alongside the independents.

Those kitchens cook for children, patients and residents, the people who get sickest from a mistake, so every handler needs food hygiene training, the person supervising needs supervisor training, and the training has to be evidenced for the whole team rather than just the chef. At the other end, the independents around Kelham Island and London Road are small, quick-moving businesses where one person often does everything. Training that runs online, in the language a new starter reads best, fits both.

Sheffield City Council’s health protection team inspects the city’s food businesses under the Food Hygiene Rating Scheme. Register with the council at least 28 days before you open. Displaying the sticker is voluntary in England, but Sheffield’s scores are published on the Food Standards Agency website as soon as they are issued, so the number is public either way.
