Why you need it
Broken glass in food can cut a customer’s mouth or throat, and tiny fragments can travel well beyond the visible breakage. Picking glass out of food is never safe enough.
Your food safety procedures should cover physical hazards such as glass, and a clear breakage procedure helps you show that an incident was handled properly.
What it’s for
Four steps for a breakage near food: isolating the area, discarding food or ice that may contain fragments, clearing up with suitable tools and protection, and inspecting and cleaning before restarting. It belongs in kitchens, bars and anywhere glass is used near food.
How to use it
- Put it up in the kitchen and behind the bar, where glass is most often broken near food or ice.
- Stop work nearby and keep people away until the supervisor has seen the area.
- Throw away any food or ice that could contain fragments, even if you cannot see glass in it.
- Clean and inspect surfaces, equipment and footwear, then record the incident.
- Restart only once the supervisor has checked the area and cleared it.
