Why you need it

A customer ordering online or by phone cannot see your allergen chart or talk to the chef. Allergic reactions can be severe, so they depend entirely on what you tell them.

When you sell food at a distance, allergen information must be available before the customer completes the purchase and again when the food is delivered.

What it’s for

Four steps for distance orders: making allergen information available before purchase, checking the actual order against current recipes, passing the allergy request clearly to the kitchen, and identifying the meal at delivery. It belongs by the phone and wherever online orders come in.

How to use it

  1. Put it beside the phone and the tablet or printer where online orders arrive.
  2. Check sauces, garnishes and substitutions against your current recipe and ingredient records.
  3. Write the particular allergy on the order and tell the kitchen before cooking starts.
  4. If you cannot safely meet the request, tell the customer honestly rather than guessing.
  5. Update your menus on third-party ordering apps whenever a recipe or supplier changes.
