What an inspector looks at
Food hygiene inspectors look at three things: how hygienically food is handled (preparation, cooking, reheating, cooling and storage), the condition and cleanliness of the building and equipment, and how food safety is managed, including your written system, records and training. The questions follow those three areas.
The checklist is written from Food Standards Agency and Food Standards Scotland guidance. It helps you find gaps; it isn’t legal advice and it doesn’t replace your food safety management system.
