Why you need it

Fruit and salad are usually eaten raw, so nothing will kill bacteria that reach them during preparation. Soil from unwashed vegetables and juices from raw meat are the main risks.

A separate ready-to-eat area for produce is part of FSA advice on preventing cross-contamination.

What it’s for

A station sign for the fruit and salad area: green board and utensils, no soil or raw food, produce washed before it arrives where needed, and prepared salads covered and chilled promptly. It warns against rewashing produce supplied as ready to eat.

How to use it

  1. Put it above the salad bench, near the salad fridge and away from the vegetable sink and raw station.
  2. Keep this bench for washed or ready-to-eat produce only, and prepare muddy vegetables in the brown area.
  3. Store the green boards and knives here so they are not borrowed for other jobs.
  4. Cover finished salads and refrigerate them as soon as they are ready.
  5. Laminate the sign so staff can wipe it clean along with the bench.
