Why you need it
Cream, custard, soft cheese and chilled fillings let bacteria grow if they warm up, and most bakery items are eaten without further cooking. This area needs protecting like any other ready-to-eat station.
It also handles several of the 14 allergens at once, including milk, egg, gluten and nuts, so allergen checks matter here every time.
What it’s for

How to use it
- Put it above the pastry or dessert bench, near the dairy fridge and away from raw food.
- Keep flour and nut ingredients in closed, labelled containers so dust and crumbs stay in this area.
- Take cream and fillings out of the fridge only when needed and return them promptly.
- Send allergy orders to your allergy station, or follow your allergen procedure, rather than making them here.
- Laminate the sign so floury hands and spills wipe off easily.
